Cook the Farm: Cuisine, horticulture, history and anthropology

Location: Regaleali, Sicily and surrounding rural areas
Meetings: Monday – Friday, 8:30 AM-4:30 PM

Language: English/Italian (Primary courses and readings in English, the few Italian-taught lessons will be translated to English)

English students should be willing to learn basic Italian before attending.

Methods of Learning:
Weeks will consist of approximately 1 field trip day, 2 days of tastings, lectures, and outdoor tutorials, assignments and 1-2 days of kitchen cooking.
• Lectures (Approximately 60 hours)
• Hands-on: cooking (Approximately 65 hours) or farming (Approximately 31 hours)
• 15 field trips
• Experiences with local artisans (Approximately 40 hours)

Students should be eager to participate in horticulture activities, willing to work as a team or individually, keep a course journal, participate in discussions and attend daily classes. While there is no final exam, we ask students to consider the experience and share feedback as a final wrap up.
