Our teaching style, intensive or not depending on the preferences of our guests, is leavened by the informal approach of Anna, Venceslao and Fabrizia, and by the fact that the only prerequisites for our courses are curiosity and enthusiasm. With the help of Anna and Fabrizia, beginners learn to cook recipes that are simple, delicious and never banal, while more expert cooks can concentrate on sophisticated dishes. The school’s culinary philosophy draws on traditional Sicilian cooking, both that of the Monsù (from monsieur), the cooks of the great aristocratic families, as well as peasant fare, rich in vegetables and greens, including field greens. The courses offer both practical training, during which students can roll up their sleeves and practice kitchen techniques, as well as classroom moments, with brief asides on ingredients and recipes.
