Good cuisine depends on high quality raw materials. In Sicily, fortunately, the quality of food ingredients is excellent; the strong sun and the quality of the soil guarantee food products that are rich in flavor. Another of our rules is to follow the seasons. It is pointless to ask for eggplants in winter, when they will taste like cardboard, or to demand artichokes in September. The raw materials that we use to cook are thus all produced locally, if not at Regaleali, then from farmers and fields near us. |
