| A weekend to celebrate chocolate |
![]() ![]() ![]() In collaboration with the renowned chocolatier Antica Dolceria Bonajuto of Modica 2 days class Level: all price: 800 € per person all included Chocolate came to Sicily with the Spanish in 1600, and the ancient recipes the Spanish learned from the Maya are still made in Modica today. The course starts with the working of the cocoa bean paste, beginning with the grinding and toasting of the beans. Day 2 is devoted to ancient chocolate recipes, both sweet and savory, in which chocolate is used as a “spice”, as well as to some recipes that belong to Sicilian tradition. Practical details The course includes 4 hours of lessons a day, 2 in the morning and 2 in the afternoon. Each lesson begins with a brief explanation of the ingredients and the recipe, followed by the practice period, in which the students “get their hands dirty” making the dishes themselves. Program Friday Arrival after lunch between 3 and 5 pm. Unpacking 6 pm: conference and video on exhibit “Chocolate from Maya to nowdays”. Tea and tasting of chocolate from Antica Dolceria Bonajuto Dinner Saturday Breakfast 10,30 am: lesson on the working of the cocoa bean paste and cooking lesson Lunch Downtime 5,30 pm: cooking lesson Dinner Sunday Breakfast 10,30 am: cooking lesson Lunch Departure Information Lunch and dinner are served in the school kitchen with chef Anna and family. Arrivals on Friday afternoon, departures on Sunday after lunch. Cooking lessons begin at 10.30 am. Lunch at 1 pm. Lessons resume between 5 pm and 7. Lesson are held on Friday, Saturday and Sunday morning (conference and cooking lesson) for a total of 7 hours. Two nights lodging with breakfast, 4 meals. Among the dishes that will be prepared in this course: saffron rice balls stuffed with chocolate or with meat (arancine), stuffed sardines (sarde beccafico), profiteroles, cannoli, caponata, chocolate bavaroise, impanatigghi typical cookies stuffed with meat and chocolate from Modica. Cost of course is 800€ per person all included. Transfer from Palermo to Regaleali with driver can be organized on request and is paid separately (about 220€ roundtrip). |
